Rum isn’t just for cocktails!

When we think about ways to enjoy ARLU Rum, of course the first that springs to mind is in a number of delicious cocktails. However, rum can be a brilliant addition to a number of other savoury and sweet recipes. Using the bold, punchy and flavoursome notes of the ARLU Rum range can take your cooking to the next level. Let us show you how with our Mojito Cheesecake recipe…

ARLU Mojito Cheesecake

Ingredients

Makes 8 small pot cheesecakes

Base

  • 250g digestive biscuits
  • 125g unsalted butter

Curd: 

  • 15ml ARLU Rum Original Spiced
  • 100g light brown sugar
  • 50g unsalted butter
  • 2 medium eggs 
  • 2 limes, zested and juiced
  • 8 mint leaves 

Cheesecake filling

  • 35ml ARLU Rum Original Spiced
  • 300g full fat cream cheese
  • 100ml double cream 
  • 60g golden icing sugar

Method

Blitz the digestives in a food processor. (If you don’t have a food processor, smash them up with a rolling pin.)
Melt the butter.
Combine the biscuit crumb and the melted butter.
Put the biscuit crumb into the base of cheesecake pots.
Put in the fridge to set (approx. 30 mins) whilst we make the curd.
Put the zest and juice of limes into a bowl.
Finely chop the mint leaves and add to the bowl.
Cube up 50g butter and add to the bowl along with light brown sugar and 15ml rum.
Melt the mixture together in a bain-marie.
When the butter is melted, and the mixture is smooth and silky, beat 2 medium eggs together and then add slowly to the mix.
Slowly whisk continuously over the heat until the curd is custard-like in texture.
Push the curd through a sieve into a clean bowl.
Add the curd to the cheesecake pots.
Put in the fridge to set (approx 1 hr).

Using an electric whisk (you can beat by hand if you’re strong enough), combine the cheese, icing sugar and rum. Mix until very smooth.
In a separate bowl, whisk up 100ml of cream, until it forms stiff peaks.
Combine the two mixtures by gently folding them together until smooth.
When base and curd is set, add the cheesecake filling to the pots and level off.
Let cheesecakes set in the fridge (overnight ideally).
Garnish with mint leaves and lime.

Top Tip - inject cheesecakes with rum once the cheesecake is set, for an extra hit of ARLU goodness.
